Title: Baked Acorn Squash

Yield: 4 Servings

1mdAcorn squash
1tsCorn oil
  Sea salt to taste
1tsSoy sauce
1tbMaple syrup (optional)

Preheat oven to 375 degrees.

Wash squash, cut off end and remove hard spots.Cut in half from point to stem and scoop out seeds.

Lightly bursh inside and outside with oil. Rub inside with sea salt.

Place cut side down in a lightly oiled baking dish or cast iron pot. Cover and bake for 30 minutes or until tender. Remove from oven.

Place squash on a broiler pan, cut side up. Lightly brush with soy sauce and drizzle with maple syrup.Broiol for 5 minutes or until golden Cut into quarters or scoop out and mash. Serve hot.
